Today I tried Judy’s Magic Mixes – Temptation Chocolate Cake Mix. This cake mix is gluten-free, wheat-free, egg-free, soy-free, GMO-free. I added milk but you could just as easily use a milk substitute if you want it to be dairy free as well.
This cake has a great texture, moist, soft and bouncy. It’s very similar to a mayo chocolate cake that I used to make all the time. It’s a very good cake. I did it up with chocolate frosting and sprinkles like a regular cake. I was a little concerned from tasting the batter, it had a distinct brown rice flavour, but you don’t taste it when the cake is baked. Really good stuff, you’d never know it’s gluten-free.
It makes a small cake, it’s about half as much batter as most cake mixes that I’ve used, but that might be a good thing. If you’re hoping to do something like layered cake you probably need two pouches of mix.
